A first ever all-Australian Whisky release, much anticipated. This self-assured young talent was placed in ex-bourbon barrels for a period of time until our Master Distiller gave it the green light. mature but not before assertive. Exquisite scents of dried fig and cedar lead to a palate of warm toffee, buttery length, and citrus peel. High quality and purity malting barley from Australia is well known. The source of this one variety is in southern Queensland. The liquid is copper pot distilled after malting, mashing, and fermentation, and then it is placed in barrels made of former Bourbon oak. Excellent character development has been gently accelerated by the warm climate of the Riverland.
